Can the “Greens First” Method Add Veggies to Your Diet?

All of us should probably be eating more vegetables. But it’s so hard when you’re staring at a plate of yummy food and the greens sit there taking a backseat to the perfectly seasoned meat and satisfying starch. Eating veggies offers a ton of benefits, from increased fiber intake to better gut health and immunity—but if you’re not a fan or are just excited to eat the other, yummier foods on your plate, it can be hard to get them in.

The good news is that there’s one simple trick that can have you eating more vegetables effortlessly: eat them first. That’s right, “starting with vegetables increases the likelihood you’ll actually eat them before appetite declines later in the meal,” says registered dietitian Kara Siedman, RDN, CDCES, director of partnerships at resbiotic. If you’re a picky eater and don’t love veggies, this can sound like a challenge. To make it easier, we reached out to a psychotherapist and a dietitian to get their best tips and encouragement to help you incorporate this habit into your next meal.
