Try These Low-Cost, High-Fiber Dinners
Part of the popularity of ultraprocessed foods is rooted in how inexpensive they are. They tend to lack important nutrients like fiber and are usually high in added sugar.
But dialing back your ultraprocessed food intake and prioritizing nutrient-dense whole food doesn’t have to hurt your wallet as much as you may think — nor does it require a costly meal delivery subscription, Dr. Trisha Pasricha, gastroenterologist, author and assistant professor at Harvard, recently told CNBC.
“On a typical weeknight in my house with two toddlers, one puppy and no extra time, dinner has to be fast, fiber-rich and something my kids will actually eat,” Pasricha said. So, she’s mastered the art of the nutritious meal that takes fewer than 45 minutes and costs approximately $20 for a family of four.
